Hasselback potatoes

The potato is omnipresent in Swedish cuisine. In this version, potatoes are slit across in an even-spaced manner but not all the way through. They are then oven-roasted with oil and herbs. This way, they cook faster than conventional baked potatoes and they look great on the table too. You can also insert slices of cheese or bacon into the gaps.
