We inherited this relish recipe from my mother-in-law, who was born and raised in Walkerton, Ontario, Canada almost 100 years and got it from her mom (and so on and so on …) It's a treasured family heirloom.

Ingredients

  • 5 cups ground dill pickle sized cucumbers
  • 3 cups ground onions
  • 2 cups ground hot red peppers
  • 2 cups ground sweet green peppers
  • 3 cups finely chopped celery
  • 2/3 cups salt
  • 1.5 quarts water
  • 3 cups white vinegar
  • 4 cups sugar
  • 2 t mustard seed
  • 1T celery seed

Preparation

Step 1

5 cups ground dill pickle sized cucumbers
3 cups ground onions
2 ground hot red peppers
2 ground sweet green peppers
3 cups finely chopped celery

Add:

2/3 cups salt
1.5 quarts water

Cover and let stand overnight.

The next day drain and heat to boiling.

Add:

3 cups white vinegar
4 cups sugar
2 t mustard seed
1T celery seed

Bring all to a boil and cook slowly for 10 minutes.
Seal in hot, sterilized jars.
