"Skinny" Italian Pasta Salad

Here is a lighter version of the traditional italian pasta salad
- 1 pound whole wheat short pasta, such as fusili, bowtie or penne
- 1 pint cherry or grape tomatoes, halved
- 1 cup pearl-sized fresh mozzarella, drained
- 1/4 pound salami, ( I use turkey salami) sliced about as wide as the pasta you are using
- 1/2 red onion, thinly sliced
- 1/2 cup loosely packed basil leaves, julienned
- 1/4 cup balsamic vinegar
- 2 to 3 tablespoons extra-virgin olive oil (use the lower amount if you prefer a more tart dressing)
- 2 teaspoons Dijon mustard
- 1/2 teaspoon fine-grain sea salt
- 1/2 teaspoon crushed red pepper flakes
Sausage and Kale pasta

Heat a pan with 2 tbs of olive oil and saute the sliced sausages until cooked ( they should produce some liquid) ,...
- 3 sausage links, any kind
- 3 cups chopped kale, regular or baby ( can use any other green like spinach or swiss chard)
- ¼ cup white wine
- Olive Oil
- salt
- 200-250 grams pasta (orecchiette is best for this one)

- 3 1/2 cups milk
- 2 tsp mustard
- 1 tsp minced onion
- 2 cups shredded sharp cheddar cheese
- 2 cups mozzarella cheese
- 1 box of elbow macaroni (16oz)
- Combine all ingredients in sprayed slow cooker
- Cover and cook for 2 hours
Italian Breaded Lemon Chicken

This lemon chicken is creamy salty and has just the right amount of flavor perfect for any meal
- 4 boneless skinless chicken breasts.
- 1/2 cup of flour
- 1/2 cup of Italian seasoned breadcrumbs
- Garlic minced
- 4 tbsp butter
- 4 tbsp lemon juice, if using fresh lemon reserve some rind for garnish
- 3 tbsp capers
- 2 eggs and a bit of water or milk
- 1/4 cup your preferred type of cooking oil
- Salt-and-pepper to taste
- 1 tsp tarragon more if desired
- Two plastic bags. I use them to coat the chicken but they are not necessary.
- 1/2 pound of your favorite pasta cooked and drained.
- Optional parmesan cheese
