Ingredients
- 2 venison steaks
- 3/4 tbsp butter
- salt & pepper
- For the sauce:
- 3/4 cup (generous) of stock (preferably game)
- 2 3/4 tbsp red wine
- 3 1/3 tbsp cherry liqueur
- 1 3/4 tbsp cold butter, diced
- cherries in syrup
- 1 tablespoon syrup
- salt & pepper

Preparation
Step 1
The sauce: Reduce the stock by 2/3, then add the wine, liqueur and cherry syrup. Let boiling resume. Season. Add the butter then whole cherries. Keep warm.
Step 2
Meat: Preheat the oven to 425 F. In a hot pan, melt the butter and cook the steaks 4-5 minutes on each side. They should be golden. To finish cooking, bake for 10 to 15 minutes.
Step 3
Serve steaks topped with cherry sauce. Bon appetit!
