Venison Steak with Cherry Sauce

Ingredients

  • 2 venison steaks
  • 3/4 tbsp butter
  • salt & pepper
  • For the sauce:
  • 3/4 cup (generous) of stock (preferably game)
  • 2 3/4 tbsp red wine
  • 3 1/3 tbsp cherry liqueur
  • 1 3/4 tbsp cold butter, diced
  • cherries in syrup
  • 1 tablespoon syrup
  • salt & pepper

Preparation

Step 1

The sauce: Reduce the stock by 2/3, then add the wine, liqueur and cherry syrup. Let boiling resume. Season. Add the butter then whole cherries. Keep warm.

Step 2

Meat: Preheat the oven to 425 F. In a hot pan, melt the butter and cook the steaks 4-5 minutes on each side. They should be golden. To finish cooking, bake for 10 to 15 minutes.

Step 3

Serve steaks topped with cherry sauce. Bon appetit!
