Ingredients
- For the Crêpes
- * 3 1/3 cup flour
- * 6 eggs
- * 4 1/4 milk
- * Scant 1 cup oil
- * 2 teaspoon salt
- For the filling
- * ½ cup of vinegar to the broth
- * 30 shrimp or crayfish
- * 8 oz (about 2 1/2 cups) mushrooms
- * cognac
- * 1 egg
- * Cream
- * 1 onion
- * 7 tbs butter
- * Butter for the baking dish
Preparation
Step 1
Pour flour in a bowl, add 2 teaspoon salt and six eggs. Dissolve slowly adding warm milk. Fill with oil to get about 4 cups of mixture. The dough is ready to be poured into the pan.
Step 2
Prepare the broth and simmer the prawns for 15 min. Drain. Keep 4 for garnish, and peel the rest.
Step 3
Sauté the sliced mushrooms in 1/3 of butter. Fry separately the shrimp tails in the remaining butter. Pour the brandy, flambé, add the mushrooms and then add half the sour cream, onion and 1 egg, then season.
Step 4
Top crêpes with this mixture, store them in a buttered casserole dish and spread with the remaining sour cream. Let broil for 10 minutes, then garnish with the 4 whole shrimp.
