Almond and Pistachio Crusted Sardines

- 1 lb. fillet fresh sardines (without scales and dorsal fin)
- 1/2 cup flour
- scant 1/2 cup ground almonds
- 1/2 cup crushed pistachios
- 3/4 stick of butter into pieces
- 1/2 cup grated Parmesan cheese
- oregano
- sea salt and pepper,

Preparation
Step 1
- Preheat oven to 400 ° F
- Prepare the crust: Combine flour, ground almonds, parmesan, pistachios, a pinch of salt, butter and a tbsp of water. Work the dough by making the butter into a sandy texture (the butter should be covered with dry matter). Rub the dough on your hands so as to obtain small lumps. For immediate use put the mixture on a plate (if not form into a ball and cover with plastic wrap and keep cold)
Step 2
- In a lightly oiled baking dish, place the sardine fillets side by side. Add salt and pepper and sprinkle with oregano
- Cover the fish with nut topping and bake for 20 minutes (until the crust is lightly browned). Serve warm.
