Step 1
Cut the eggplant into slices lengthwise, arrange on a baking sheet and put them in the oven under the broiler for about ten minutes. Turn over halfway through cooking. Go for a pie plate with pastry. Pour over the tomato paste, sprinkle with chopped basil, feta of the pieces, salt and pepper. Top with eggplant slices. Sprinkle with Parmesan and garnish with black olives. Bake the pie for about 30 minutes.
