Ingredients
- 1 onion
- 1 lb. chicken breasts
- 2 lemons
- Salt
- cayenne pepper
- 6 cardamoms
- turmeric
- 1 cube of vegetable broth or homemade stock
- 3 carrots
- 8 oz white rice
- 1 tsp cornstarch
Preparation
Step 1
Sauté the onion in a little olive oil.
Step 2
Cut the chicken breast into cubes, add to onion and brown.
Step 3
Add the lemon zest and juice of 1/2 lemon, salt, cayenne pepper, cardamom seeds (toasted) and sauté a few minutes. Lower heat and cook 20 minutes.
Step 4
Meanwhile, bring vegetable broth to boil, to cook carrot tagliatelle ( peel the carrots and cut into tagliatelle form using a peeler) a few minutes, they should remain slightly crunchy. Drain reserving broth and keep warm.
Step 5
In the broth, cook rice 15-20 min depending on the variety. Drain it, add turmeric to your liking.
Step 6
Take juice of the other 1 / 2 lemon and mix the cornstarch, add to chicken for a sauce, be careful not to let thicken, it must remain fluid.
