Ingredients
- 4-5 shallots
- 4 lbs of carrots
- 1 cup sour cream
- 2 cloves of garlic
- 1 tablespoon olive oil
- Ginger (optional)
- Salt and pepper
Preparation
Step 1
Peel and wash carrots. Cut the carrots. In a casserole cook shallots without browning for 1 to 2 minutes. Add carrots and sweat for 1-2 minutes. Salt and pepper.
Step 2
Add the chopped ginger (optional). Add the garlic cloves. Moisten with a little water.
Step 3
Cook covered over low heat for 15 to 20 minutes. Testing for doneness with a knife. Add the cream and let thicken over low heat for 4-5 minutes. Correct the seasoning with salt and pepper.
Step 4
Serve immediately in a casserole as an accompaniment to white meat. Bon appetit.!
