Mushrooms stuffed with yellow squash, chorizo and cream cheese

Ingredients
- 12 portobello mushrooms
- 1 yellow squash
- 3 oz chorizo
- 1/2 onion
- 1 large tablespoon of cream cheese
- 3 tablespoons grated Parmesan cheese
Preparation
Step 1
Preheat oven to 350 ° F. Wash mushrooms, remove stem. In blender chop the yellow squash and chorizo and 1/2 onion. In a skillet saute the chorizo, add squash and onion for 5-7 minutes.
Step 2
At the end of cooking add the Philadelphia and 2 tablespoons of Parmesan. Stuff the mushrooms, top each with a bit of grated Parmesan cheese. Bake 15 minutes. Serve with a mesclun salad dressing.
