- For about 145 small crescents
- 2 3/4 cup flour
- 1/3 cup sugar
- 13 1/2 tbsp (about 1 3/4 sticks) butter
- 1 cup almonds blanched and grated
- 12 sachets of vanilla sugar

Preparation
Step 1
Remove the butter from the refrigerator. Mix flour, sugar and almonds. Add the butter, still cold, cut into pieces, and start working the dough until it is homogeneous. Refrigerate 60 minutes. Preheat oven to 300 ° F.
Step 2
Take a portion of the dough and cut into pieces. Form small crescents.
Step 3
On a baking tray, lined with parchment paper, place the crescents (leave a little space between each) and bake for 15 min.
Step 4
Monitor, so the color does not get too brown. Put vanilla sugar in a bowl.
Step 5
Remove the crescents from the oven and wait 5 minutes. Still hot, and using a spatula, remove them one by one from the plate and very gently roll them in vanilla sugar. Repeat the process with the rest of the dough.
