Pear Shortbread with Green Tea Foam
Ingredients
- 4 Pears
- 1/2 cup of crushed almonds
- 4 tablespoons of sugar
- 1 package filo dough
- 1/3 cup of almond powder
- 3 1/2 tbsp of butter
- 10 oz pear pulp
- 1 teaspoon of green tea
- 3 sheets of gelatin

Preparation
Step 1
Boil the pear pulp, add the tea and the gelatine sheets
prevously soaked in a cold water. Drain and place the cream in the syphon, gaze and reserve in the fridge for 30 minutes.
Step 2
Melt the butter and spread it in the filo sheets, add the sugar
and the almond powder. Cut in shapes the shape of triangles and cook it for 10 minutes at 400°.
Step 3
Peel the pears, cut them in quarters and sauté them with butter and a tablespoon of honey.
Step 4
Serve the shortbread arranged with the pears in a desert
plate. Add the foam on the side in a glass.
