Arroz Con Gandules

Ingredients
- 2 cups rice (rinsed)
- 4 cups of hot water
- ½ cup sofrito
- 1/2 teaspoon oregano
- 1 can of gandules
- 2 tablespoons of alcaparrado (capers and olives mixed together)
- 1 packet of Sazon with achiote
- 1 small can tomato sauce
- 1/2 chopped jamon de cocinar or salchichon
- 3 tablespoons of oil
- Salt & pepper to taste

Preparation
Step 1
In a medium size caldero add the oil, sofrito, sazon, oregano,and jamon. cook 2 minutes.
Step 2
Add tomato sauce, gandules and alcaparrado, Cook over
medium heat for another 2 minutes.
Step 3
Add rice and water,
Step 4
Bring back up to a boil.
When water absorbs down to top of rice, stir once, cover and reduce heat.
Step 5
Cook about 30 minutes or until rice is tender
