Ingredients

  • one chicken, cut up, or chicken pieces
  • 1-2 green peppers sliced
  • 1 large onion sliced
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • 4 Tablespoons olive oil
  • 2 Tablespoons vinegar
  • 1/2 cup olives
  • 1 teaspoon Adobo
  • 3 Bay leaves
  • 1 small can tomato sauce
  • 1 cup water
  • 3/4 cup grape juice

Preparation

Step 1

Add olive oil to pot and heat, season chicken with salt, pepper, garlic powder, and Adobo. Brown chicken on both sides, and remove from pot,

Step 2

In pot cook onion, peppers, and olives until tender, add water if needed,

Step 3

Add chicken back into pot, along with tomato sauce, water, grape juice, vinegar, and Bay leaves,

Step 4

Cook over low to medium heat, for 45 minutes to an hour, or longer if needed for desired tenderness.
