Ingredients

  • 4-5 large russet potatoes, peeled & sliced 1/8 inch thick
  • 1/4 cup butter
  • 1/2 sweet yellow onion, diced
  • 1 tablespoon flour
  • Sea salt and fresh cracked pepper to taste
  • 2 cups of milk
  • 2 cups of extra sharp cheddar cheese, shredded
  • 1/4 cup bread crumbs

Preparation

Step 1

Preheat oven to 375 degrees. Spray a casserole dish with
cooking spray

Step 2

Peel potatoes. Cut into 1/8-inch slices,
spread in casserole dish.

Step 3

Melt butter in saucepan over medium heat. Add onions and cook, stirring occasionally, until tender.

Step 4

Stir in flour, salt and pepper.
Cook, stirring constantly, until bubbly; remove from heat.

Step 5

Slowly stir in milk and 1 1/2 cups of the cheese. Heat to boiling, stirring constantly. Boil and stir 1 minute until the cheese is completely melted

Step 6

Pour cheese sauce over potatoes, and bake uncovered for 1 hour.

Step 7

Mix remaining cheese and the bread crumbs; sprinkle over
potatoes.
Bake uncovered 15 to 20 minutes longer or until top is brown and bubbly.
