Easy Rustic Chicken Soup

Chicken soup is the ultimate comfort food. From curing the common cold to warming us up on cold winter days it invokes images of warm, cozy blankets and a comfortable place to rest. This version of chicken soup is made easy using some prepared ingredients, while incorporating a flavorful twist on an old classic.

Ingredients
- 2 large or 3 medium chopped onions
- 1 stalk chopped celery
- Olive oil for sautéing
- 2 large or 4 small cloves chopped garlic
- 2 chopped bell peppers
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon dried red pepper flakes
- Cayenne pepper to taste
- 2 teaspoons kosher salt or chicken bouillon to taste
- 2 (28-ounce) cans whole tomatoes in puree, undrained
- 1/4 cup chopped fresh basil leaves (can use dry but see tips section for alteration to recipe)
- 2 cups shredded or cut up cooked chicken (left over is fine)
Preparation
Step 1
In a large sauce pan, Dutch oven, or soup pot, over medium heat sauté chopped onions and celery in olive oil until tender and sweet 5-10 minutes
Step 2
Add garlic and cook for another minute
Step 3
Add bell peppers, chili powder, cumin, red pepper flakes, cayenne, and salt (or bouillon) and cook until spice bloom and are fragrant
Step 4
Smash canned tomatoes and add them to the pot with the fresh basil, bring to a boil then simmer for 30 minutes
Step 5
Add cooked chicken and continue to simmer until chicken is warm, and serve
If using dried basil use 3-4 teaspoons and add it with the other spices and bell peppers.
