  • 1/4 cup onion
  • 2 Tbsp fresh jalapeno pepper, chopped
  • 2 eggs, beaten
  • 2 cups cream style corn
  • 2/3 cup milk
  • 1- 6 1/2 oz. pkg cornbread mix
  • 4 slices american cheese

Preparation

Step 1

Preheat oven to 425. Brown ground beef until crumbly; drain off excess fat. Add onion and jalapeno; set aside. Combine eggs, 1 cup of corn and milk with cornbread mix. Stir just until dry ingredients are moistened. Pour half of the batter into a greased 9-inch square pan. Top with beef mixture, cheese slices and remaining 1 cup corn. Pour remaining half of batter on top and bake.
