  • 1 package active dry yeast
  • 1/4 cup warm water
  • 2 cups scalded milk
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 tablespoon shortening or butter
  • 5 3/4 to 6 1/4 cups flour

Preparation

Step 1

Prepare yeast with warm water according to package directions.

Step 2

Combine scalded milk, sugar, salt, and butter/shortening in a large bowl. Cool to lukewarm.

Step 3

Stir in 2 cups flour, beat well, add yeast, and mix.

Step 4

Add enough remaining flour to make a moderately stiff dough.

Step 5

Knead until smooth (8 to 10 minutes).

Step 6

Shape in a ball and place in a lightly greased bowl, turning once to grease surface. Cover and place in a warm place until double in size.

Step 7

Punch down the dough, and cut into two portions. Shape into loaves and allow size to double again.

Step 8

Cut a couple of lines into the top of each loaf if desired. Bake at 400 degrees for 35 minutes or until done.
