Ingredients
- 3 cups shredded green cabbage
- 1 cup shredded red cabbage
- 1 1/4 cups shredded carrot
- 1 small red onion, finely chopped
- DRESSING
- 1/3 cup mayonnaise
- 3 Tbsp frozen apple juice concentrate
- 2 Tbsp apple cider vinegar
- 3/4 tsp celery seeds
- 1 Tbsp Dijon style mustard
- 1/2 tsp grated lemon peel
- 1/2 tsp salt
- 1/4 tsp black pepper
- fresh parsley sprigs for garnish
Preparation
Step 1
To prepare the dressing, in a small bowl, combine the mayo, apple juice concentrate, vinegar, mustard, celery seeds, lemon peel, salt and pepper. Mix until well blended.
Step 2
In a large bowl, combine the green and red cabbage, carrot, and onion. Toss to mix well.
Step 3
Add the dressing and stir until vegetables are evenly coated. Place in a serving dish. Garnish with parsley and serve
