Ingredients

  • 8 slices day old whole wheat bread, cut into 1/2 inch cubes (about 4 cups)
  • 2 medium red delicious apples, peeled, cored and chopped (about 1 1/2 cups)
  • 1/4 cup golden raisins
  • 2 cups skim milk
  • 1/2 cup maple syrup
  • 2 large eggs, lightly beaten
  • 1 tsp vanilla
  • 1/4 tsp ground cinnamon
  • 1 egg white
  • 1 Tbsp sugar
  • light frozen whipped topping thawed for garnish

Preparation

Step 1

Preheat oven to 350F. Spray a 2 quart casserole dish with vegetable cooking spray.

Step 2

In prepared dish, combine bread cubes, apples, and raisins. Mix well.

Step 3

In a medium bowl, combine milk, maple syrup, eggs, vanilla, and cinnamon. Mix well.

Step 4

In a medium bowl, using an electric mixer set on high speed, beat egg white until foamy. Gradually add sugar, beating until stiff peaks form. Fold beaten egg white mixture into milk mixture until blended. Pour egg mixture over bread cubes in casserole. Let stand for 5 minutes.

Step 5

Bake bread pudding until center is firm and a knife inserted in the center comes out almost clean, about 55 minutes. Place pudding on a wire rack and cool for 5 minutes. Garnish with whipped topping. Serve warm.
