Ingredients

  • 3 pounds ground beef
  • 3 packages chili season
  • 2 cans Rotel
  • 1 can tomato sauce
  • 1 can of beer (prefer dark beer)
  • 2 cans chili beans or kidney beans
  • 3 garlic cloves (finely chopped)
  • 3 tablespoons minced onions
  • 3 tablespoons cajun seasoning

Preparation

Step 1

Cook ground beef and chopped garlic in large saucepan over medium high heat until beef is crumbled and no longer pink, stirring occasionally; drain.

Step 2

Stir in seasoning mix and the beer to the ground beef and let simmer for about 10 minutes. Then add the remaining ingredients; bring to a boil. Reduce heat to medium and simmer for awhile (longer you let the chili cook the more flavor it will be.)

Step 3

Topped with shredded cheese and serve with crackers.
