Savory Stuffed Tenderloin

Ingredients

  • 2 pound beef tenderloin, trimmed
  • 1 Tbsp freshly ground black pepper
  • flat leaf parsley for garnish
  • For the stuffing:
  • 1 medium yellow onion, finely chopped
  • 2 cups sliced mushrooms
  • 1/4 tsp dried tarragon
  • 1/8 tsp salt

Preparation

Step 1

To prepare stuffing, spray a large skillet with cooking spray. Add onion to prepared skillet, cook stirring frequently, until golden, about 5 minutes. Add mushrooms, tarragon, and salt. Cook stirring frequently for 5 minutes. Remove from heat.

Step 2

Preheat oven to 350F. Make a cut about 2 inches deep, down the long side of the tenderloin. Spread the tenderloin open.

Step 3

Spoon the stuffing inside tenderloin to within 1/2 inches of the edges. Roll up tenderloin lengthwise, sprinkle with pepper. Wrap tenderloin in cheese cloth, tie at intervals with string to secure.

Step 4

Place tenderloin, seam side down on a rack in a roasting pan. Roast tenderloin until a thermometer reads 160F for medium, about 50 minutes.

Step 5

Place tenderloin on a carving board; let stand for 5 minutes. Remove string and cheese cloth. Slice meat and arrange slices on a serving platter. Garnish with parsley. Serve immediately.
