Chicken Tostadas

Ingredients

  • 1/4 cup fresh lime juice
  • 1 Tbsp fresh cilantro
  • 4 skinless, boneless chicken breast halves, sliced into thin strips
  • 1 medium yellow onion, chopped
  • 1 medium green bell pepper, chopped
  • 1 can (14 oz) Italian plum tomatoes
  • 4 corn tortillas, warmed
  • 1/2 head iceberg lettuce, shredded
  • 14 cup shredded monterey jack cheese
  • 1/4 cup shredded cheddar cheese

Preparation

Step 1

In a shallow bowl, combine lime juice and cilantro. Mix well. Add chicken and toss to coat.

Step 2

Spray a large skillet with cooking spray. Add onion, green pepper to skillet. Cook, stirring over medium heat until soft, about 2 minutes. Stir in chicken mixture and tomatoes with liquid. Reduce heat to low, simmer for 20 minutes.

Step 3

Line tortillas with lettuce. Spoon chicken mixture over lettuce. Top with sour cream. Sprinkle with cheeses.

Step 4

Microwave:
In a microwave safe casserole, combine lime juice, cilantro, onion, bell pepper, and tomatoes with liquid. Mix well. Add chicken mixture; toss to coat. Microwave on high until meat and vegetables are tender, about 10 minutes.
