Chewy Fiber and Fruit Bars

These bars are oh so delicious and packed full of fiber! The kids will even love them!

Ingredients
- 1/4 cup Margarine
- 1/2 bag miniature marshmallows (or 17 large cut up)
- 1 tsp vanilla
- 2 tsp cinnamon
- 3 cups Special K Oats & Honey
- 1 cup coarsely chopped dried cranberries
- 1/4 cup raisins
- 1/2 cup mini Chipits
- 1/2 shredded coconut
- 1/2 slivered almonds
Preparation
Step 1
In a large mixing bowl combine cereal, cranberries, raisins, chocolate chips, coconut and almonds. Toss gently to mix evenly. Set aside.
Step 2
In a medium saucepan using low heat combine and melt the following margarine, marshmallows, vanilla, cinnamon. Remove from heat.
Step 3
Once marshmallow mixture is completely melted immediately add it to the dry ingredients and mix quickly to evenly coat cereal mixture. Pat the mixture into a 8x13 baking dish which has been lined with wax paper or lightly greased with a small amount of margarine.
Step 4
Let cool in refrigerator for 10 minutes, then slice and enjoy!
Play around with this recipe! You can use any nuts you wish. For the holidays try drizzling a little caramel on top.
