- 2/3 cup butter
- 2/3 cup all-purpose flour
- 7 cups milk
- 4 large baking potatoes, baked & cubed
- 4 green scallions, sliced (sweet onion can be substituted)
- 12 strips bacon
- 1 1/2 cups shredded cheddar cheese
- 1 cup (8 oz.) sour cream
- 1 tbsp salt
- 1 tbsp pepper

Preparation
Step 1
In a dutch oven, melt the butter. Stir in flour and heat, stirring until smooth.
Step 2
Add milk, stirring until thickened. Add potatoes and scallions.
Step 3
Bring to a boil, constantly stirring. Reduce heat and simmer for 10 minutes.
Step 4
Add remaining ingredients, stirring until cheese is melted.
Step 5
Serve immediately.
