Chicken Red Curry with Coconut Milk

Ingredients

  • 1 lb chicken breast thinly sliced
  • 1 sweet onion thinly sliced
  • 1 T peanut oil
  • 1 can coconut milk
  • 1 T fish sauce
  • 1 T lime juice
  • 1/4 C red curry paste

Preparation

Step 1

Stir fry chicken and onions in 1 T peanut oil.

Step 2

Whisk together, coconut milk, fish sauce, lime juice, and curry paste.

Step 3

Pour sauce over chicken and onions and heat through.

Step 4

Serve with rice or rice noodles. Garnish with chopped peanuts, shredded carrots, shredded cabbage, bean sprouts, and cilantro.
