Ingredients

  • 4 medium-large baking potatoes
  • 1/8 cup melted butter (plan on 1 Tsp per potato)
  • 1 tsp salt (sprinkle of salt on each
  • 2-3 Tbs chopped fresh herbs (or 2 tsp dried): try basil, thyme, oregano, chives, or Italian seasoning
  • 1/4 cup grated Parmesan or any cheese you like.

Preparation

Step 1

Wash and peel potatoes. Cut into thin slices, but not all the way through the potato (use the handle of a wooden spoon placed alongside the potato to prevent cutting all the way through). After slicing I put them in the microwave on high for 5 minutes. Bring potatoes out of microwave and place in baking dish (i used a metal pan). Drizzle melted butter, sprinkle salt, pepper and herbs on potatoes, making sure to get some between each slice. With grated cheese (I used a per shredded mix of mozzarella, Edam, and provolone.) and place a few shreds in between each slice and a little bit on top of each potato.
Bake at 400°F for 15-20 minutes, or until potatoes are cooked and cheese is golden.
