Lemon Roasted Potatoes

- 4 lbs potatoes peeled
- 1 c water
- 1/2 c lemon juice
- 1/3 c olive oil
- 3 cloves garlic - minced
- 2 tsp salt
- 2 tsp dried oregano
- 1 tsp pepper

Step 1
Cut potatoes length wise into thick wedges. Place in 13 x 9 baking dish. Whisk together remaining ingredients and pour over potatoes turning to coat evenly. Bake at 325 Degree F gently turning occasionally to keep potatoes well moistened for about 2 hours or until potatoes are very tender.
