Ingredients
- 1 cup boiling water
- 1 pkg 85g jello lemon jelly powder
- 1 pkg 2 layer size lemon cake mix
- 3/4 cup oil
- 1/4 cup grated lemon peel
- 4 eggs
- 1 cup icing sugar
- 1/4 cup lemon juice
Preparation
Step 1
Preheat oven to 350 degree F. Grease 2 8x4 loaf pans. Stir boiling water into dry jelly powder til completely dissolved. Mix cake mix, oil, lemon peel, and dissolve jelly and eggs in a large bowl and beat til moistened. Beat on med. til well blended. Pour batter into pans. Bake 40 mins or til wooden toothpick comes out clean. Pierce cakes with large fork at 1/2 inch intervals. Mix sugar,lemon juice til well blended and carefully pour over cakes. Cool in pans 30 min. invert cakes onto wire rack and cool.
