Ingredients
- 1 1/2 cups all purpose flour
- 2/3 cups brown sugar
- 1/2 tsp ground cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1/2 tsp bicarbonate of soda
- 2 lightly beaten eggs
- 1/2 cup milk
- 1/3 cup oil
- 1 cup chopped ripe bananas
- 1 cup chopped peeled ripe pears
Preparation
Step 1
Preheat the oven to 325°F.
Sift the flour into bowl and combine with the sugar, cinnamon and soda. Make a well in the center.
Step 2
In a separate bowl whisk together the eggs, milk and oil. Fold into the flour mixture and mix until well combined, but don’t beat. Stir in the fruit.
Step 3
Pour into a greased and floured loaf tin, and bake in preheated oven for 45-50 minutes until cooked through.
A toothpick inserted should come out clean when it's done.
Unmold, and let cool on a wire rack.
