Ingredients
- 1 1/2 cups Orzo Pasta (cooked)
- 3 Tbsp Olive Oil
- 2 White Onions (diced)
- 12 cloves Garlic (minced)
- 4 Jalapenos (diced)
- 1 1/2 lbs Chicken Breast (diced)
- 10 cups Chicken Broth
- 2 Tomatoes (skinned and diced)
- 1/2 cup Cilantro
- 1/2 cup Lime Juice
Preparation
Step 1
Fry onion, garlic, and jalapenos in olive oil.
Step 2
Add chicken and cook for 5 minutes, stirring frequently.
Step 3
Add broth, tomatoes, and lime juice. Bring the soup to a boil.
Step 4
Lower heat and simmer until chicken is fully cooked.
Step 5
Add cooked orzo and cilantro.
Step 6
Season with salt & pepper to taste. Garnish with avocado, shredded cheese or any other ingredients of your choice. Enjoy!
