Pizza Dough

A nice simple dough. Makes two round pizzas.

Ingredients

  • 2 1/4 tsp yeast
  • 1 1/3 cups warm water
  • 3 1/2 - 3 3/4 cups flour
  • 1 Tbs olive oil
  • 1 Tbs salt
  • 1 Tbs sugar

Preparation

Step 1

Combine yeast and warm water in a large bowl. Let stand for 5-10 minutes until yeast is dissolved and is starting to foam up.

Step 2

Mix in the rest of the ingredients. Mix until it's all holding together. Turn dough onto lightly floured surface and knead for 10 minutes. The dough should be smooth and elastic, tacky but not sticky.

Step 3

Transfer dough to a bowl lightly covered with additional oil. Turn the dough over to coat it completely. Cover with plastic wrap and let rise until doubled in volume (about 90 minutes)

Step 4

Punch dough down and divide in half. Let rest for 10 minutes. While it's resting preheat your oven to 450 degrees.

Step 5

Dust your pizza stone with cornmeal (don't skimp, you don't want your dough to stick) and roll out your dough. Brush the top of your dough with some olive oil and push dents into the surface of your dough. (This will prevent air bubbles and your toppings making the dough soggy).

Step 6

Add your toppings.

Step 7

Bake for about 12-15 minutes. Make sure that you broil it for a couple of minutes so that your cheese is nice and melted.
