Ingredients
- 4 cups of cooked Quinoa ( note: 1 cup uncooked quinoa yields about 4 cups cooked)
- 1 diced/sliced red onion
- 1/2 cup olive oil
- 1/2 cup red wine vinegar ( or white)
- salt and pepper to taste
- 1 cup chopped spinach
- 3 tsp of Dijon
Preparation
Step 1
Mix all ingredients together and serve. Easiest to mix the wet ingredients first.
