Ingredients
- 2 cups cooked quinoa
- 1 can green chiles
- 1 cup corn kernels
- 1 tomato, diced
- 1/2 cup shredded cheese
- 1 tsp garlic powder
- 1 tsp cayenne pepper
- 1/2 tsp onion powder
- 1/2 tsp cumin
- 4 green bell peppers
Preparation
Step 1
Prepare your quinoa. While it's cooking combine green chiles, corn kernels, diced tomato, cheese and spices.
Step 2
Add the quinoa into the mixture and mix well.
Step 3
Cut the tops off the bell peppers and seed them.
Step 4
Fill the bell peppers with the quinoa mixture. Top with some extra grated cheese. Replace the tops of the peppers.
Step 5
Preheat your oven to 350 degrees. Cook the peppers for 25 minutes. Serve hot.
