Ingredients

  • 1 pkg. (250g) cream cheese
  • 1 cup cooked chicken - finely chopped
  • 1 cup monterey jack cheese - grated
  • 1/3 cup red peppers - finely chopped
  • ¼ cup fresh cilantro - chopped (optional)
  • 2 tsp. ground cumin
  • 4 flour tortillas
  • vegetable oil
  • salsa & sour cream to serve

Preparation

Step 1

In large bowl, combine cream cheese, chicken, monterey jack, red pepper, cumin and cilantro (if using).

Step 2

Spread mixture evenly over tortillas. Roll up each tortilla tightly around chicken mixture.

Step 3

Wrap in plastic wrap and refrigerate at least 2 hours or up to 24 hours.

Step 4

Heat oven to 350°F.

Step 5

Cut each tortilla roll into half inch slices. Arrange on greased or non stick baking sheet, brush with oil.

Step 6

Bake for 13 to 15 minutes or until lightly browned.

Step 7

Serve hot with salsa and sour cream for dipping.

Make sure to chop everything into very tiny pieces.
