Basic Risotto

Ingredients

  • 4 tbsp oil, divided
  • 1/2 cup finely diced yellow onion
  • 3/4 tbsp dried thyme
  • 3 cups gluten free, fat free low sodium chicken broth
  • 1 cup cooked rice
  • 2 oz. finely shredded parmesan cheese (1/4 cup)

Preparation

Step 1

Heat 2 tbsp oil in skilled, add onion and cook 15 minutes. Alternatively, caramelize the onions by substituting the oil for 1/2 cup water, cooking on med-high for 40 minutes, topping up the water as it cooks, the onions will be "mushy".

Step 2

Heat broth in a pot and let simmer.

Step 3

Add 2 tbsp to the skillet, stirring in rice and 1/2 cup broth.

Step 4

Cook, stirring until broth is absorbed.

Step 5

Stir in broth 1/2 cup at a time, cook and stir 25-30 minutes or until each is absorbed.

Step 6

Continue to cook until rice is creamy.

Step 7

Spoon into 6 bowls, sprinkle with parmesana ne serve.

This is a basic recipe. You may add your own vegetables, meat or potatoes.
