Ingredients
- 1 can coconut milk
- 2 tbs green thai curry paste
- 2 chicken breasts
- 1 package frozen thai vegetables
- 1 tsp lime
- 1 tsp soya sauce
Preparation
Step 1
Mix the can of coconut milk with the curry paste in a pot over medium-high heat. Bring to a boil and let simmer 10-15 minutes, depending on how thick you want the sauce
Step 2
Fry chicken in a frying pan until internal temperature of 180 degrees Celsius is reached. Cut into bite-sized pieces
Step 3
When coconut milk mixture has reached the desired consistency, reduce heat and add the frozen vegetables, chicken, lime juice and soya sauce. Cook until vegetables are finished.
Step 4
Serve over rice, rice noodles, or serve on it's own
