Ingredients
- 3 C water
- 1 onion, finely chopped
- 1 medium potato, cubed
- 1 medium carrot, cut in strips
- 1 stalk celery, chopped
- 1 green pepper, chopped
- 1 C beets - grated raw
- 1 can kidney beans, rinsed
- 2 cloves garlic
- 1 tbsp sugar
- 2/3 tbsp oil
- 1 tsp salt
- 1 8oz can tomato sauce
- 1/2 C parsley
Preparation
Step 1
Add ingredients one at a time to large pot on medium heat. Bring to a boil. Cook until potatoes are done, about 20 minutes.
Serve with sour cream
