Ingredients

  • 1 cup flour
  • 1 cup rolled oats
  • 1 cup brown sugar
  • 1 tsp. baking soda
  • ½ cup shortening
  • Filling
  • 2 eggs
  • 1 cup brown sugar
  • ½ tsp. almond extract
  • 2 tbsp. flour
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • 1 cup coconut
  • 1 cup maraschino cherries
  • Drained and chopped
  • ½ cup walnuts
  • Icing
  • 1/4 cup margarine
  • 1/2 tsp. almond extract
  • 2 cups sifted icing sugar
  • 3-4 tbsp. milk coloured with cherry juice

Preparation

Step 1

Crust – combine flour, oats, brown sugar, and baking soda in mixing bowl, cut in shortening until crumbly, press into a 9x13 inch pan. Bake 350 for 10 minutes.
Filling – beat eggs, brown sugar, and extract together thoroughly, combine flour, baking powder, salt and stir into egg mixture. Mix well and stir in coconut, cherries and nuts and spread evenly over crust bake at 350 for 25 minutes or lightly browned. Cool completely
Icing – beat all ingredients together until smooth and creamy spread over bars.
