CHRISTMAS CARROT PUDDING (Mark's Grandma Anderson's recipe)

Ingredients
- 1 1/2 cups flour
- 1 cup brown sugar
- 1 cup beef suet
- 1 cup stoned raisins
- 1 cup currants
- 1 cup grated raw potatoes
- 1 cup grated raw carrots
- 1 teaspoon baking soda
- Steam or boil for 3 hours
- Brown Sugar Sauce:
- 1/2 cup brown sugar
- 1 tablespoon cornstarch
- 3/4 cup water
- 2 tablespoons butter
- 1/2 teaspoon vanilla

Step 1
Brown Sugar Sauce:
Mix sugar and cornstarch thoroughly; add cold water and stir to a thin paste.
Cook with constant stirring until there is no taste of raw starch; add butter; cool; add vanilla. Makes about 1 cup sauce.
