Ingredients

  • 1/4 cup good olive oil, 3 tbls minced garlic, 1/3 cup dry white wine, 1tbls grated lemon zest, 2tbls fresh squeezed lemon juice, 1 1/2 tsp dried oregano, 1 tsp minced fresh thyme leaves, kosher salt, fresh ground black pepper, 4 boneless chicken breasts skin on.

Preparation

Step 1

preheat oven 400

Step 2

warm olive oil in small saucepan over medium heat. add garlic and cook for 1 min. do not brown.

Step 3

take off heat and add white wine, lemon zest, lemon juice, oregano, thyme, and 1 tsp salt.

Step 4

pour into 9x12 baking dish. pat chicken dry and place skin side up over sauce. brush with olive oil and sprinkle liberally with salt and pepper. cut lemon in 8 wedges and tuck among chicken.

Step 5

bake 30-40 mins til chicken done and skin lightly browned. if skin needs it broil for couple mins to brown. cover and rest for 10 mins. sprinkle with salt and serve hot with pan juice.
