Nutty Blueberry Citrus Tart

A nutty base filled with citrus curd and topped with fresh blueberries.

Ingredients

  • Filling:
  • 2 egg yolks
  • 1/2 cup fresh squeezed grapefruit juice (lemon & lime can be used)
  • 1 tbsp flour
  • 1/4 cup sugar
  • 1 tsp rum
  • Crust:
  • 1/4 cup toasted ground nuts: almonds, hazelnuts, peanuts, pecans
  • 1 tsp sugar
  • 2 tbsp coconut oil or butter, melted
  • 1 tsp cinnamon

Preparation

Step 1

Whisk the yolks,flour, juice and sugar together in a small sauce pot. Turn the heat to high.
Whisk continuously and vigorously bringing to a boil. Reduce heat to med. and continue to whisk constantly until thickened like pudding. Remove from heat,add rum then strain through a sieve and cool for 10min.

Step 2

While the curd cools; mix the crust together and press firmly down and up the sides of 2 3"-4" tarlet forms.

Step 3

Spoon the filling into the crust and refrigerated for 30min or up to 2 hrs uncovered.
Top with fresh blueberries.
Garnish: dust with icing sugar
