Stuffed Spinach Manicotti

A delicious little Italian recipe. Perfect meal to whip up with your partner for date night. Pair with a nice bottle of Chianti.

Ingredients
- 2 - 8oz manicotti shells, uncooked
- 1 10oz frozen spinach, thawed, rinsed well, squeeze dry
- 1 15oz fat free ricotta cheese
- 1 block reduced fat cream cheese, bring to room temperature
- 3/4 cup chopped onion
- 2 tsp parsley
- 2 tsp basil
- 1/8 tsp pepper
- 1 34oz marinara sauce
Preparation
Step 1
Preheat oven to 350*. Line your baking sheet with paper and lightly spray with olive oil.
Step 2
Mix the first 7 ingredients in a large bowl with your hands.
Step 3
Now take one manicotti shell and fill gently with your hands, or use a piping bag. Lay shell on baking sheet, fill remaining shells. Now evenly pour marinara sauce over all shells.
Step 4
Bake for 40 minutes covered with foil, remove foil and bake another 10 minutes.
You can cut recipe in half by using 1 - 8oz box of manicotti shells. Just top any extra mixture on top of each shell, bake time remains the same. Enjoy!
