Ingredients
- 2 Pounds of Beef
- 3 Onions
- 3 Sliced Carrots
- 2 Bell Peppers (I prefer Red ones) Sliced
- Salt
- Pepper
- 1 prig of thyme
- 1 cup Vegetable stock
- Olive oil
Preparation
Step 1
Slice the onions up, then cut the beef into cubes. Cook together in a small amount of olive oil, until brown.
Step 2
Put into casserole and pour the vegetable stock over it, then season with the slised bell peppers.
Step 3
Add more olive oil to that in the frying pan and brown the slices of carrot.
Step 4
Add the carrots, thyme, salt and pepper to the casserole when the meat is partly cooked.
Step 5
Cook for a total of about 90 minutes adding more stock if necessary.
