- 3 aubergines
- 2 onions
- olive oil
- 2 cloves garlic, finely chopped
- 1 sweet green pepper, seeded and diced
- 3 tomatoes, peeled and diced
- 1 lemon
- fresh parsley
- salt and pepper

Preparation
Step 1
Peel and cube the aubergines. Boil them in water until tender.
Step 2
Drain and finely chop into a smooth paste.
Step 3
Fry the onions in a half cup of good olive oil taking care not to brown them. Add the garlic, green pepper and continue to fry gently over low heat.
Step 4
When the onions and peppers are softened, add the cooked and chopped aubergines, tomatoes, the juice of one lemon, about a half cupful of chopped fresh parsley, black pepper and salt.
Step 5
Continue cooking over low heat until the mixture is soft.
