lil Shepherds Pie

Ingredients
- 1 tbsp (15 ml) Olive oil
- 1 lb Ground lamb or ground beef
- 1 Cup (250 ml) onion, finely chopped
- 1 Cup (250 ml) carrot, peeled and finely chopped
- 2 tsp (10 ml) fresh thyme, finely chopped
- 2 tbsp (30 ml) tomato paste
- 2 tsp (10 ml) Worcestershire sauce
- 1 1/2 Cups (375 ml) water
- 1/2 Cups frozen peas
- Salt and pepper
- 3 cups (750 ml) Yukon gold potatoes, peeled and chopped
- 1/2 (125 ml) milf (or potatoes), warmed
- 1 tbsp (15 ml) butter
- 1/2 Cup (125 ml) cheddar cheese, grated
- 3 store bough pie shells each 9 inches (23 cm)

Preparation
Step 1
Cook meat, set aside
Add onion and carrots to pan and saute over med heat for 10 min
Place meat back in pan with thyme, tomato paste, flour and Worcestershire sauce.
Stir in till flour is fully combined
Add milk, water bring to a boil
Reduce heat to low
Let simmer for 20 min untill thickened and meat and veg are tender
Stir in peas and season well with salt and pepper
Set mixture aside to cool
Step 2
Preheat oven to 400 F (200 C)
Boil potatoes till tender,strain return to pot
Add warm milk, butter and half cheese
Mash well
season with salt
Set aside
Step 3
Using a large cookie cutter or cup cut out 12 circles from pie shells
Circle should be 4 inches (10 cm) wide
Cut out close together to get 12
Place each circle cut outs in muffin tin
Using fingers to shape into muffin holes
The edge of the pastry should come up to the edge of the hole
Step 4
Add meat mix evenly to each tart
Top with each with mash potatoes
Sprinkle remaining cheese over the top
Bake in oven for 25 min in till pastry is cooked through and topping is golden
