Mom's Morning Glory Muffins

Ingredients
- 2 cup all purpose flour
- 1 1/4 cup sugar
- 2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 2 cups grated carrot
- 1/2 cup raisins
- 1/2 cup nuts
- 1/2 cup coconut
- 1 apple, peeled, cored, and grated
- 3 eggs
- 1 cup oil
- 2 tsp vanilla

Preparation
Step 1
Preheat oven to 350*
In large bowl, mix flour, sugar, baking soda, salt, and cinnamon.
Step 2
Stir in grated carrot, raisins, nuts, coconut, and grated apple.
Step 3
In separate bowl, beat eggs, oil, and vanilla.
Step 4
Mix egg mixture into flour mixture until just combined.
Step 5
Pour batter into 12 cup greased muffin tin (about to the top) and bake for 20 minutes.
Step 6
Makes about 14 large muffins.
