Old Fashoned Chocolate Icing 0 Picture

Ingredients

  • 1/2 cup unsalted butter
  • 1 1/2 cups sugar
  • 1 1/4 cups unsweetened cocoa
  • 1/8 tsp salt
  • 1 1/4 cup heavy cream
  • 1/4 cup sour cream
  • 2 tsps vanilla extract (I also used a touch of orange extract just because it's one of our families favorite flavor combos)

Preparation

Step 1

In a large saucepan, over medium heat, melt the butter. Stir in the sugar and cocoa powder. The mixture will be thick and grainy. Remove from the heat. Combine the heavy cream, sour cream and vanilla in a measuring cup. Put the pan back over medium heat and whisk gradually into the cocoa mixture.
Cook until the sugar dissolves and the mixture is smooth, glossy and hot to the touch. Do NOT boil.

Step 2

Remove from the heat and then either cool at room temperature until totally cool and thick enough to spread or, better method, chill in the fridge for about 30 to 40 minutes, until thick enough to spread.
Ready to frost your cake.
