Ingredients
- 1 lb Italian Sausage
- 1 cup chopped onions
- 1 1/2 cup (3 medium) sliced zucchini
- 2/3 cup tomato paste
- 1 cup water
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 3 cups cooked rice
- 1/4 cup grated Romano cheese
- 1 cup shredded mozzarella cheese
Preparation
Step 1
Remove sausage from casing. Brown sausage with onions in skillet, stirring to break up sausage. Drain off excess fat. Remove mixture from skillet to 2 quart casserole. Add zucchini to skillet. Cook uncover for 5 minutes.
Step 2
Combine tomato paste, water, basil and salt, mix. Add tomato mixture and rice to meat mixture. Mix
Step 3
Arrange zucchini slices on top. Sprinkle with cheese. Cover. Bake at 350 degrees for 20 minutes. Serve warm.
