Ingredients

  • 1 cup Shortening
  • 2 cups brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 cups rolled oats
  • 1 cup coconut
  • 1 teaspoon vanilla

Preparation

Step 1

Cream shortening well, add brown sugar, beating well. Add eggs and vanilla, beating well. Mix flour, salt and baking soda and add to shortening mixture.

Step 2

Stir in the rolled oats and vanilla. Drop by tap onto greased cookie sheets and flatten with fork which has been dipped in water.

Step 3

Bake at 350 degrees for 10-12 minutes. Makes 5-6 dozen cookies.
